Instructions

  1. Marinate the Chicken

    • Combine chicken thighs with half of the curry powder, olive oil, and a pinch of salt and black pepper in a bowl.
    • Mix thoroughly and let marinate for at least 15 minutes.
  2. Toast the Sunflower Seeds

    • Heat a frying pan over medium heat.
    • Add sunflower seeds and toast for 2–3 minutes, stirring constantly until golden.
    • Remove from pan and set aside.
  3. Prepare the Curry Dressing

    • Stir in the remaining curry powder and cook for 1–2 minutes.
    • Transfer the mixture to a large mixing bowl.
  4. Cook the Chicken

    • Cook marinated chicken thighs for 8–10 minutes, flipping halfway, until fully cooked and slightly charred.
    • Remove from pan, let rest for 5 minutes, and shred with two forks.

    • Cook rice noodles according to package instructions.
    • Drain and rinse under cold water to stop cooking.
    • Set aside.
  6. Prepare Vegetables and Herbs

    • Dice tomatoes into pieces.
    • Slice cucumber into chunks.
    • Peel and finely slice shallots.
    • Pick mint leaves from stems.
    • Add all to the mixing bowl with curry dressing.
  7. Assemble the Salad

    • Add shredded chicken, rice noodles, and toasted sunflower seeds to the bowl.
    • Squeeze lime juice and drizzle oyster sauce.
    • Toss until well combined and adjust seasoning as needed.
  8. Serve
