Instructions

  1. Prepare Oven and Tray

    • Preheat oven to 200°C (390°F).
    • Line a large baking tray with parchment paper or grease with olive oil.
  2. Season and Roast Potatoes

    • Wash and dice potatoes into evenly sized chunks.
    • Toss with olive oil, salt, black pepper, and half the rosemary.
    • Spread on baking tray in a single layer.
    • Roast for 25-30 minutes, flipping halfway, until golden and crispy.
  3. Prepare Vegetables

    • Trim woody ends off asparagus.
    • Cut cherry tomatoes into halves.
    • Set aside.
  4. Wrap Cod Fillets

    • Pat cod fillets dry with paper towel.
    • Lay a slice of ham flat and place cod on it.
    • Wrap ham around fish snugly.
    • Repeat for all fillets.
  5. Season Cod

    • Brush wrapped fillets with olive oil.
    • Sprinkle with remaining rosemary and black pepper.
  6. Add Vegetables to Tray

    • Remove tray from oven once potatoes are golden.
    • Scatter asparagus and tomatoes over potatoes.
    • Toss gently in residual oil.
  7. Bake Cod

    • Place ham-wrapped cod on top of vegetables.
    • Return tray to oven.
    • Bake for 15-17 minutes until fish is opaque and flakes easily.
  8. Finish with Lemon

    • Remove tray from oven.
    • Squeeze fresh lemon juice over cod and vegetables.
  9. Serve

    2 min hands-on

    • Plate roasted potatoes, asparagus, and tomatoes.
    • Top with cod fillets.
    • Garnish with black pepper and olive oil if desired.
    • Serve immediately.
    • Cooking tips:
    • To ensure even cooking, make sure all potato chunks are roughly the same size.
    • Wrapping the cod with ham not only adds flavor but also helps lock in moisture.
    • If the vegetables seem too dry, drizzle an additional teaspoon of olive oil over them before adding the cod.
    • For added texture, broil the tray for 1-2 minutes at the end to crisp up the ham and lightly char the asparagus.
