Instructions

  1. Prepare Couscous Base

    • Combine couscous with boiling vegetable broth in a large heatproof bowl.
    • Stir, cover, and let sit for 10–15 minutes until liquid is absorbed.
    • Fluff with a fork and set aside to cool.
  2. Chop Vegetables

    • Finely chop onion, parsley, and basil.
    • Dice mushrooms and mince garlic.
    • Use a food processor if desired, pulsing separately to maintain texture.
  3. Cook Mushroom Filling

    • Heat olive oil in a skillet over medium heat.
    • Sauté onion with a pinch of salt until softened.
    • Add garlic and cook until fragrant.
    • Stir in mushrooms and cook until golden.
