Instructions

  1. Prepare the Mushrooms

    • Preheat the oven to 220°C (fan-assisted).
    • Tear or slice the mushrooms into chunks and arrange on a baking tray.
    • Grate garlic over the mushrooms and sprinkle with rosemary needles.
    • Drizzle with olive oil, season with salt and pepper, and toss to coat.
    • Roast for 25-30 minutes, stirring halfway, until golden and crispy.
  2. Cook the Couscous

    • Bring water to a boil in a medium saucepan.
    • Stir in couscous and a pinch of salt, then remove from heat.
    • Cover and let sit for 5-7 minutes until water is absorbed.
    • Fluff with a fork and set aside.
