Roast the Peppers

- Place the yellow sweet peppers on a baking tray and drizzle with olive oil.
- Roast for 15 minutes until they begin to soften and blister slightly.
- Remove from the oven, let cool slightly, then slice open lengthwise and remove seeds. Set aside.

Cook the Lentils
