Instructions

  1. Prepare the Roasted Eggplant

    • Preheat the oven to 220°C (430°F).
    • Slice the eggplant into finger-sized batons and place on a parchment-lined baking tray.
    • Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
    • Roast for 20-25 minutes until tender and lightly charred. Remove and set aside.
  2. Make the Coriander Lime Broth
