  • 57 g Soybeans
  • 21 g Parmesan
  • 15 g Olive Oil

Instructions

  1. Prepare Ingredients

    • Rinse and trim the ends of the soybeans.
    • Slice the zucchini into bite-sized chunks.
    • Finely chop the basil leaves, reserving some for garnish.
  2. Cook Pasta and Vegetables

    • Bring a large pot of salted water to a boil.
    • Add the pasta, soybeans, and zucchini to the boiling water.
    • Cook for 10-12 minutes, stirring occasionally, until pasta is al dente and vegetables are tender.
  3. Reserve and Drain

    • Reserve a mug of pasta water before draining.
    • Drain the pasta and vegetables, then return to the pot.
  4. Combine Ingredients

    • Add two-thirds of the Parmesan, most of the basil, olive oil, salt, and pepper to the pot.
    • Add small amounts of reserved pasta water to create a creamy sauce.
    • Stir until Parmesan melts and coats evenly.
  5. Rest the Dish

    • Cover the pot and let sit for 5 minutes to meld flavors.
  6. Plate and Garnish

    • Serve pasta on plates or bowls.
    • Drizzle with remaining olive oil and optional chili oil.
    • Top with reserved Parmesan, basil, and black pepper.
