Prepare the Broccoli

- Cut the broccoli into wedges, keeping stems attached.
- Arrange wedges cut-side down on a baking tray.
- Drizzle with olive oil and sprinkle with cumin, salt, and cayenne pepper.
- Roast for 25-30 minutes until tender and edges are charred.

Pickle the Onions

- Thinly slice the onion and place in a small bowl.
- Juice one and a half limes and pour over the onions.
- Add a pinch of salt and massage gently.
- Set aside to pickle.

Make the Salsa Macha
