  • 280 g Cauliflower
  • 202 g Potatoes
  • 50 g Onions
  • 40 g Garlic
  • 20 g Tahini
  • 6 g Lemons
  • 5 g Cayenne

Instructions

  1. Prepare Vegetables for Roasting

    • Preheat the oven to 180°C (350°F).
    • Chop cauliflower into small florets and dice potatoes into small cubes. Slice the garlic bulb in half horizontally.
  2. Season and Roast Vegetables

    • Divide cauliflower, potatoes, and halved garlic bulb between two baking trays.
    • Drizzle with olive oil and sprinkle with cumin seeds, paprika, and salt. Toss to coat evenly.
    • Roast in the oven for 40 minutes, until cauliflower is golden and potatoes are tender.
  3. Reserve Garnish

    • Remove a handful of the crispiest cauliflower florets and potato cubes. Set aside for garnish.
  4. Prepare Soup Base

    • Dice onion and finely chop garlic cloves.
    • Heat olive oil in a large pot over medium heat, sauté onion and garlic for 5 minutes until onion is translucent.
    • Add cumin seeds and paprika, cook for 30 seconds.
  5. Combine and Blend

    • Add roasted cauliflower and potatoes to the pot, squeeze roasted garlic flesh into the mixture.
    • Pour in vegetable broth and bring to a gentle simmer.
    • Use an immersion blender to puree until smooth. Stir in tahini and adjust consistency with water if needed. Season with salt.
  6. Prepare Herb-Chili Topping

    • Thinly slice remaining garlic cloves, red chili, and parsley.
    • Heat olive oil in a frying pan over medium heat. Add cumin seeds and cook for 1 minute until popping.
    • Add sliced garlic, chili, and sesame seeds, fry for 2 minutes until garlic is golden. Stir in parsley, fry for 30 seconds until crispy. Season with salt and black pepper.
  7. Assemble and Serve

    • Ladle soup into bowls. Top with reserved roasted cauliflower and potatoes.
    • Spoon crispy herb-chili topping over soup, drizzle with extra tahini, and sprinkle with sumac. Serve hot.
    • Cooking tips:
    • For extra crunch, roast reserved cauliflower and potatoes for an additional 5-10 minutes while the soup simmers.
    • When blending, let the soup cool slightly if using a standard blender to prevent splattering.
    • Adjust the spice level by changing the cayenne and chili quantities.
    • For added smoky depth, sprinkle smoked paprika over the soup before serving.
