- Preheat the oven to 180°C (356°F).
- Cut the cauliflower into bite-sized florets and spread on a baking tray.
- Drizzle with half of the olive oil and sprinkle with turmeric, paprika, cumin seeds, cayenne pepper, salt, and black pepper.
- Toss to coat the cauliflower evenly with spices. Roast for 20–25 minutes until golden brown, flipping halfway through.

- Finely dice the onion and carrot.
- Heat the remaining olive oil in a large pot over medium heat. Add the onion and carrot, and sauté for 3–4 minutes until softened.

- Add the remaining cumin seeds and paprika, along with cayenne pepper, salt, and black pepper. Stir to coat the vegetables.
