  • 80 g Pinto Beans
  • 40 g Lemons
  • 6 g Garlic

Instructions

  1. Preheat and Prepare Cauliflower

    • Preheat oven to 220°C (428°F).
    • Separate cauliflower into medium florets, keeping tender leaves.
    • Discard tough outer leaves.
  2. Season and Roast Cauliflower

    • Place florets in a baking dish and drizzle with olive oil.
    • Season with salt and black pepper, then toss to coat.
    • Roast uncovered for 15-18 minutes, stirring halfway, until edges brown.
    • Drizzle cauliflower leaves with olive oil and bake for 6-8 minutes until crispy.
  3. Lower Oven Temperature

    • Reduce oven temperature to 190°C (374°F).
  4. Prepare Flavor Base

    • Grate garlic and mix with hot water, vegetable broth, and olive oil.
    • Stir until broth dissolves.
  5. Assemble the Dish

    • Add rinsed pinto beans, dry pasta, and broth mixture to the roasted cauliflower.
    • Squeeze juice of half a lemon over the mixture and stir to combine.
  6. Bake Pasta Mixture

  7. Add Lemon and Finish Baking

    • Slice lemon into rounds and layer over mixture.

    • Remove cover for final 5 minutes to develop a crust.
  8. Check and Adjust

    • If not fully cooked and dry, add water, stir, and bake for 5 more minutes uncovered.
  9. Garnish and Serve
