Toast the Pine Nuts

- Preheat the oven to 160°C (320°F).
- Spread the pine nuts evenly on a baking tray and roast for 10-12 minutes, stirring once halfway, until golden and aromatic.
- Remove from the oven and set aside to cool.

Prepare the Aromatics

- Heat olive oil in a large pot over medium heat and sauté the onions for 8-10 minutes until soft and translucent, stirring frequently.
