Instructions

  1. Prepare the Sweet Potato

    • Peel the sweet potato and cut into 1cm chunks. Add to a saucepan and cover with water.
    • Bring to a boil, reduce heat to simmer, and cook for 7-10 minutes until fork-tender.
    • Drain and set aside to cool completely.
  2. Make the Citrus Marinade

    • Finely chop cilantro stalks and place in a mixing bowl.
    • Mince red chili to taste and add to the bowl.
    • Juice limes, orange, and lemons, then pour juice into the bowl.

  3. Prepare the Onion

  4. Fry the Tortillas

  5. Prepare the Clams

  6. Combine Onion and Clams
