Instructions

  1. Prepare the Rice Base

    • Rinse the rice under cold water until the water runs clear.
    • Melt butter in a medium saucepan over medium heat. Add the rice and stir for 2–3 minutes until lightly toasted.
    • Add water to the rice in a 2:1 water to rice ratio. Bring to a boil, then reduce heat to low. Cover and simmer for 12 minutes without lifting the lid.
    • Remove from heat and let rest, covered, for 10 minutes.
  2. Incorporate Fresh Dill

    • Wash the dill and separate fronds from stems. Roughly chop the fronds and finely slice the stems.
    • Fluff the rested rice with a fork and mix in the dill.
  3. Toast the Pasta (Optional)

    • Heat olive oil in a small skillet over medium heat. Add pasta and toast for 3–4 minutes until golden brown.
    • Mix toasted pasta into the dill rice if desired.
  4. Prepare the Stew Base

    • Add the onion and sauté for 3–4 minutes until softened.
  5. Season and Build Flavor

    • Add sun-dried tomatoes, breaking them into smaller pieces. Cook for 5–7 minutes until thickened.
  6. Cook the Green Soybeans

    • Pour in vegetable broth, stir, and bring to a gentle boil. Simmer for 8–10 minutes until soybeans are tender.
