Instructions

  1. Prepare the Base

    • Finely chop the parsley stalks and set the leaves aside for garnish.
    • Heat olive oil in a large saucepan over medium heat.
    • Grate the garlic into the pan and sauté for 30 seconds until fragrant.
    • Stir in the paprika and chopped parsley stalks, cooking for another 30 seconds.
  2. Build the Stew

    • Roughly chop the tomatoes and add them to the pan with drained pinto beans and vegetable broth.

  3. Add the Greens

    • Cook each flatbread for 2-4 minutes on each side until puffed with golden brown spots.
    • Transfer to a plate, brush with olive oil, and sprinkle with salt.

  6. Finish the Stew

    • Squeeze lemon juice into the stew and stir to brighten flavors.
    • Adjust seasoning with salt and pepper to taste.
