Prepare the Squash

- Preheat the oven to 180°C (360°F).
- Peel and slice the winter squash into thin, even slices.
- Toss slices with olive oil, thyme, and a pinch of salt. Spread on a baking tray in a single layer.
- Roast for 40-45 minutes, flipping halfway, until tender and lightly caramelized.

Cook the Rice

- Rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, bring water to a boil and add the rice. Cook until tender, then drain and set aside to cool slightly.
