Prepare the Cabbage

- Slice cabbage into quarters and place on a baking tray.
- Drizzle with olive oil and sprinkle with salt.
- Cover with foil and roast for 20 minutes.
- Remove foil and roast for an additional 15 minutes until tender and slightly charred.
- Cool slightly and chop into rough chunks. Set aside.
