  1. Prepare the Chorizo

    • Remove the casing from the chorizo if using links, and slice into rounds or crumble if using ground chorizo.
    • Heat a large saucepan over medium-high heat, add olive oil, and cook the chorizo until it releases its oils and begins to crisp, about 5-7 minutes, stirring occasionally.
  2. Add Aromatics and Peppers

    • Roughly slice the sweet yellow peppers.
    • Crush the garlic cloves with the flat side of a knife and add them to the pan with the peppers.
    • Stir in curry powder to coat the chorizo and vegetables evenly and cook for an additional 2 minutes.
  3. Incorporate Beans and Tomato Sauce

    • Drain and rinse the canned pinto beans thoroughly.
    • Add the beans and tomato sauce to the pan, stirring well to combine.

  4. Prepare the Guacamole

  5. Finish and Garnish
