Instructions

  1. Preheat and Roast Tomatoes

    • Preheat the oven to 200°C (400°F).
    • Wash and dry the tomatoes, place in a roasting tin.
    • Drizzle with olive oil and sprinkle with salt.
    • Roast for 15–20 minutes until soft and slightly charred.
  2. Cook the Pasta

    • Bring a large pot of salted water to a boil.
    • Cook the pasta until al dente, reserving some pasta water.
  3. Prepare Garlic and Curry Base

    • Peel and thinly slice the garlic.
    • Heat olive oil in a frying pan over medium heat.
    • Sauté garlic until fragrant and lightly golden.
    • Stir in curry powder and cook for an additional minute.
  4. Combine with Roasted Tomatoes

    • Transfer roasted tomatoes and juices to the frying pan.
    • Stir to combine and meld flavors over low heat for 2–3 minutes.
  5. Integrate Pasta and Lime

    • Add cooked pasta to the pan with the tomato mixture.
    • Pour in reserved pasta water to coat the pasta.
    • Squeeze in lime juice and toss until combined.
  6. Season the Dish

    • Stir in sugar and oyster sauce.
    • Adjust seasoning with salt or lime juice as needed.
  7. Garnish and Serve

    • Divide pasta into serving bowls.
    • Top with chopped cilantro and toasted sesame seeds.

    • Cooking tips:
    • To toast sesame seeds, heat them in a dry pan over medium heat until golden brown.
    • For a stronger lime flavor, zest the lime before juicing and add the zest to the sauce.
    • Be careful not to overcook the garlic as it can turn bitter.
    • For a spicier dish, add a pinch of chili flakes with the curry powder.
