Instructions

  1. Prepare Sofrito Base

    • Peel and roughly chop the onions, carrots, celery, and garlic.
    • Place them in a food processor and pulse until finely chopped but not pureed.
  2. Cook Sofrito

    • Heat olive oil in a large, deep pot over medium heat.
    • Add the chopped sofrito mixture and a pinch of salt.
    • Cook for about 12-15 minutes, stirring occasionally, until the vegetables are softened and fragrant.
  3. Prepare Mushrooms and Lentils

    • Clean and roughly chop the mushrooms.
    • Add mushrooms and raw lentils to the food processor and pulse until coarsely chopped.
  4. Enhance Base with Harissa

  5. Combine Mushrooms and Lentils
