Instructions

  1. Prepare the Bacon

    • Slice the bacon into small squares.
    • Heat a large pan over medium heat and add olive oil. Cook the bacon until crispy and golden brown.
    • Remove the bacon with a slotted spoon and set aside, leaving the fat in the pan.
  2. Sauté the Vegetables

    • Finely dice the onions, celery, carrots, and garlic.
    • Add onions, celery, and carrots to the pan with bacon fat. Sauté over medium heat for about 5 minutes until softened and slightly caramelized.
  3. Add Aromatics and Spices

    • Stir in rosemary, bay leaf, garlic, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Combine Beans and Bacon
