  6. Combine Pasta and Sauce

    2 min hands-on

    • Transfer cooked pasta to the skillet with the artichoke mixture or combine in a large mixing bowl.
    • Add a splash of reserved pasta water and toss over low heat until pasta is coated in a creamy sauce. Add more pasta water if needed.
  7. Add Fresh Flavors

    1 min hands-on

    • Stir in roughly chopped fresh mint, lemon zest, and lemon juice.
    • Mix thoroughly to distribute citrusy flavors.
  8. Season and Garnish

    1 min hands-on

    • Season with black pepper and a pinch of salt to taste.
    • Toss in toasted pine nuts for a nutty crunch.
  9. Plate and Serve

    2 min hands-on

    • Divide pasta among warm serving plates.
    • Top with extra toasted pine nuts and lemon zest for presentation.
    • Cooking tips:
    • To prevent the garlic from burning, always cook it over medium-low heat and stir frequently.
    • Use fresh lemons for zest and juice to achieve the most vibrant citrus flavor.
    • If you prefer a spicier dish, increase the amount of red chili or cayenne pepper slightly.
    • Whole-grain pasta tends to absorb more sauce, so don't hesitate to reserve extra pasta water to keep the dish moist and creamy.
    • For an added layer of flavor, you can sprinkle freshly grated parmesan or nutritional yeast on top before serving.
