Instructions

  1. Prepare the Rice Noodles

    • Pour boiling water over them until fully submerged.
    • Let soak for 6–8 minutes, stirring occasionally.
    • Drain and rinse thoroughly with cold water.
  2. Make the Lemon-Miso Dressing

    • Whisk miso paste, olive oil, and lemon juice in a small bowl.
    • Add a pinch of salt and black pepper.
    • Taste and adjust seasoning if needed.
  3. Cook the Mushrooms
