Cook the Orzo

- Bring a large pot of salted water to a rolling boil.
- Cook the whole grain orzo until al dente, typically 8–10 minutes.
- Reserve one cup of pasta water before draining.

Toast the Pine Nuts

- Heat a dry skillet over medium heat.
- Add pine nuts and toast for 2–3 minutes, shaking occasionally.
- Remove from heat when golden and aromatic.
- Set aside a small portion for garnishing.

Prepare the Pesto Base

- In a blender or food processor, combine fresh basil, fresh spearmint, half of the toasted pine nuts, chopped raw garlic, lemon zest and juice, a portion of raw spinach, grated Parmesan, salt, black pepper, and olive oil.
- Add half a cup of reserved pasta water to blend into a smooth pesto.
- Adjust consistency with more pasta water if needed.

Cook the Soybeans

- Add soybeans to the boiling water during the last 2 minutes of pasta cooking.
- Cook until tender.
- Drain pasta and soybeans together.

Combine Pasta and Pesto

- Pour spinach pesto over the pasta and mix thoroughly.
- Gradually add remaining raw spinach and toss until wilted.
- Stir in a splash of reserved pasta water if the mixture is too thick.
