  • 100 g Spinach
  • 75 g Soybeans
  • 8 g Olive Oil
  • 8 g Cream Cheese
  • 6 g Miso Paste
  • 3 g Garlic
  • 1 g Cayenne

Instructions

  1. Prepare the Pasta

    • Cook the pasta in boiling salted water until al dente, approximately 8-10 minutes.
    • Reserve one cup of the starchy pasta water before draining.
    • Set the cooked pasta aside.
  2. Cook Garlic and Soybeans

    • Heat a large skillet over medium heat and add a portion of olive oil.
    • Add finely sliced garlic and cook for 30 seconds to 1 minute, stirring frequently.
    • Add soybeans and sauté for 2-3 minutes until tender and coated in oil.
  3. Wilt the Spinach

    • Add spinach to the pan with soybeans and garlic, tossing gently.
    • Cook for 1-2 minutes until the spinach wilts but remains vibrant.
    • Season with salt and cayenne pepper, then remove from heat.
  4. Blend the Sauce

    • Transfer half of the spinach and soybean mixture to a blender.
    • Add a portion of reserved pasta water, miso, cream cheese, and remaining olive oil.
    • Blend until smooth and creamy, adjusting seasoning as needed.
  5. Combine Pasta and Sauce

    • Return the skillet with the remaining spinach and soybean mixture to low heat.
    • Add the cooked pasta to the pan.
    • Pour the blended sauce over the pasta and toss to coat.
    • Add reserved pasta water gradually to achieve a silky sauce.
  6. Serve and Garnish

    • Divide the pasta into serving bowls.
    • Optionally top with cream cheese, cayenne pepper, and a drizzle of olive oil.
    • Cooking tips:
    • Use pasta water sparingly to adjust sauce consistency.
    • Avoid overcooking garlic to prevent bitterness.
    • Add soy sauce or nutritional yeast for extra umami.
    • Thaw frozen soybeans before cooking for better texture.
