    • Dice onion, fennel bulb, and celery into small, even pieces.
    • Add them to the same saucepan with a pinch of salt and a few grinds of black pepper.
    • Sauté over medium heat for 6-8 minutes, until softened and slightly caramelized.
  3. Incorporate Garlic and Tomato Sauce

    3 min hands-on

    • Finely grate the garlic and stir into the softened vegetables.
    • Cook for 1 minute, until fragrant.

    1 min hands-on38 min waiting

    • Reduce heat to low, cover the saucepan with a lid.
    • Let the mixture simmer gently for 35-40 minutes.
    • Stir occasionally to prevent sticking and ensure even cooking.
  6. Adjust Seasoning

    1 min hands-on

    • Taste the mixture and adjust seasoning with additional salt and pepper if needed.
    • If the sauce is too thick, add a splash of water or broth to loosen it.
  7. Finish and Serve

    2 min hands-on

    • Remove the pan from heat.
    • Roughly chop parsley and sprinkle it over the dish along with grated Parmesan cheese.
    • Drizzle a small amount of olive oil over the top.
    • Divide the dish into warm bowls and serve immediately.
    • Cooking tips:
    • For perfectly tender lentils, check them occasionally during simmering; they should be soft but not mushy.
    • Use a dry red or white wine, depending on your flavor preference. Red wine will add deeper, richer notes, while white wine will contribute a lighter, brighter acidity.
    • If you enjoy a spicier kick, consider adding a pinch of red chili flakes when sautéing the garlic.
    • For a more refined texture, dice the vegetables finely so they melt into the sauce as it cooks.
