Instructions

  1. Cook the Pasta

    • Bring a large pot of salted water to a rolling boil.
    • Cook the whole-grain pasta until al dente, about 10-12 minutes.
    • Drain and rinse briefly under cold water. Set aside.
  2. Prepare the Vegetables

    • Slice the yellow pepper into thin strips.
    • Finely chop the onion and garlic.
    • Heat a large frying pan over medium-high heat and add half the olive oil.
    • Add the yellow peppers and onions with a pinch of salt.
    • Crush the bay leaves and add to the pan.

    • Remove from pan and let rest for 5-10 minutes.
  6. Assemble the Herby Pasta

    • Finely chop fresh parsley and mix into pasta.
    • Add a pinch of salt and a drizzle of olive oil. Toss to coat.
