Prepare the Marinade

- Grate the ginger into a mixing bowl.
- Squeeze the juice of half a lime into the bowl, then add the hoisin sauce and honey.
- Whisk until well combined.
- Place the salmon fillets skin-side down on a plate and brush them generously with half of the marinade.
- Set aside to marinate for 10 minutes.

Prepare the Vegetables

- Halve the bok choy lengthwise.
- Slice the scallions thinly and set aside for garnish.
- Thaw the edamame by placing it in a bowl of boiling water for 2 minutes, then drain and repeat with fresh hot water.

Cook the Vegetables in the Air Fryer

- Toss the mixed vegetables in half of the olive oil and season lightly with salt.
- Place the seasoned vegetables in the air fryer basket.
- Arrange the halved bok choy on top of the mixed vegetables and drizzle the remaining olive oil over the bok choy.

Cook the Salmon

- Lay the marinated salmon fillets, skin-side down, on top of the bok choy and vegetables in the air fryer basket.
- Set the air fryer to 180°C (356°F) and cook for 5 minutes.
- After 5 minutes, brush the salmon with the remaining marinade, allowing some to drip onto the bok choy.
- Cook for an additional 3-5 minutes, or until the salmon is flaky and cooked through.

- Once cooked, mix the rice with the thawed edamame.
